7 Year Aged Yellow Cheddar

My first experience eating cheeses that are slightly crunchy due to the aging process, I loved this cheese. Similar to the Swiss that I also bought from cedar valley, this cedar valley aged cheddar was flaky, crunchy, with a very powerful flavor. Enjoyed it much more than the 4 year cheddar I bought from Carr valley. Next time I'm that way I'll get some 8 year from Carr valley and some 15+ year from cedar valley and do some more testing.
